What would be better, to have 2X 256MB of RAM or 1X 512MB, which would be better, or will there be a difference?

Well, if your laptop has dual channel memory capability then using 2X256MB will double the memory bandwidth, if not then there will be no difference between the two. If you factor in future upgrades it would be easier if you have 1X512MB module.
