What is the largest theoretical hard drive capacity that can be installed in a notebook with T9600 CPU, PM45 Express Chipset and Intel ICH9M/EM SATA AHCI Controller? I can't seems to find the answer from intel site.

When a 2TB notebook comes along, do you think I will be able to use it?

Considering 2.5" HDD sizes are several years behind 3.5", I'm not sure if your laptop would still be practical for use by then.

3.5" 500GB HDDs have been around for about 4 years, yet the 500 GB 2.5" drives have been out for about a year.

I'm guessing there may not be an actual limit on size, but there may be a limit on the largest SATAII 2.5" drive that may be manufactured in the future, much like how the largest IDE drives stopped at around 160GB if I recall correctly.

As long as it uses the same connection and the hard drve is the same size, your computer should take it.

With SATA 3 coming in a few months I doubt SATA 2 drives are going to surpass 750Gb, if they even get that far.

And yes your laptop will be more than powerful enough in a few years. I have 6 and 7 year old laptops which still run extremely fast for daily usage.
