I am looking to get a monitor or two for work (no gaming, lots of text based stuff).
What is a good big size to get? 27" or can I go larger?
Any recommendations for a 5k or higher res monitor?
Budget: ideally under $1500. Lower is better
Additionally, I'm looking for 27-28" 4k secondary work monitors. Any recommendations?

It depends on how far away you sit from the screen and how comfortable you would be looking at a massive display. How about something like a 49-inch super ultrawide? Tons of real estate and no bezels.

I think some more info would be helpful.
The largest monitor for comfortable use? Depends on your distance and so many other factors. I enjoy a 34" ultrawide and using "small" 27" monitors at work leaves me wanting more.
What do you want to do with the monitor? I see you want 5k res, but why? Are you editing photos/videos? Are you thinking about gaming? Movies?
What are you planning on driving a 5k monitor on?

I want 5k for clarity (it's a want, not a need). I will not be editing photos/videos. No gaming, no videos. Just working with text and programming.
I am planning to drive the 5k monitor on a NVIDIA Quadro RTX 4000.
The $1500-ish budget is for a single monitor.

The only 5K display currently on the market, at least that I'm aware of, is the LG one that's designed for use with macOS. There were ones from Dell and HP, but they've been discontinued with no successors. As such, you'd be looking at 4K, and there are plenty of choices. I'd stick with Dell, something like the UltraSharp U3219Q.

Before jumping on a high resolution monitor, make sure your software supports windows display scaling properly. A frightening number of my regular use applications still lack proper compatibility and look awful.
