I'm trying to decide whether it is worth $100 more for an Intel T7100 processor over the T5250. Would I notice a difference in running applications like Photoshop or doing video editing? Is the T5250 also cosidered Santa Rosa? Would an AMD TL-56 match up with the T5250 in performance and battery life?

The T5250 could be a little slow if you do a lot of photoshop work. The program would feel more responsive with a T7100, though it's useable on both. Whether the performance gain is worth $100 is really up to you, and depends on how often you use CPU intensive apps. The TL-56 should be just as good, if not better than the T5250 in most situations.
