What do these numbers mean and which number is important?
I am looking at the NVIDIA® GeForce® GTX 560M 1.5GB GDDR5 and the 3.0GB DDR3 NVIDIA GeForce GT 555M using NVIDIA Optimus technology
1.5 < 3 but 560 > 555

Go for 560 GTX. Even if it had 1GB of GDDR5, it will beat the $hit out of 555 even if it had 5GB of GDDR3!
GBs of VRAM do not mean anything unless you run a game or something that requires a lot of memory at a very high res. -
Just go for the 560m, like XenonXTZ said. VRAM makes very little difference until you're driving multiple monitor setups at high resolutions in game, something which neither of those cards would have enough power to do anyway.
The only reason to go with the 555m is if it's significantly cheaper than the 560m. -

The GTX 560m is using GDDR5 VRAM, which is MUCH better than DDR3. Not to mention that the GTX 560m is just a faster card, overall, than the GT555m.
Get the GTX 560m. -

GTX560M = entry level high end
GT = multimedia card
GTX = gamer's card
