I have a simple question hopefully someone could answer for me.
Will the Hitachi 7k500 drive outperform an older Seagate Momentus 7200 rpm hard drive from 2008?
Will it even be noticeable?

Performance wise, they'll probably be nearly identical. But an almost 3 yr old drive should be ready for retirement. Slap the old drive into a usb enclosure, wipe it clean, and sell it to a buddy for a nice portable external drive, and you should be able to pay for your brand new Hitachi

ya upgrade is needed... the hitachi is quite good.. heard good stuff about it.. i got a Seagate Momentus XT.. its excellent and almost SSD like.
