I just bought a Prostar M570TU (Sager NP5796) with 2 gb's (1 DIMM) of DDR3 ram, and I figured I might as well go up to 4 gb (Running Windows XP pro SP3, btw); however my local computer store does not carry DDR3 memory for laptops, and I was hoping to get a recommendation for what to buy online (preferably from Newegg.com).

For the time being DDR3 prices are a bit high, I recommend to wait until end of year.
XP 32-bit should run perfect with 2GB of RAM... I have had that much memory for over 2.5 years now.
If you do not have a lot of crap or bloatware hogging resources, then there is no need to upgrade memory.
for the time being you can get:
- single 2GB DDR3 SODIMM for around $65-70
- 4GB (2 x 2GB) SODIMM kit for around $130-145
the prices should drop as they start producing more of them.
As for the cheapest (with reliable brand, warranty, and vendor) 2GB DDR3 stick currently,
- Crucial 2GB SO-DIMM DDR3 PC-8500 ..... $64.50 -

I was wondering, if I get RAM, do I have to get two of the same brand and make of RAM, or can I mix and match (2 sticks of ram from two different companies)?
Also, is there a difference between PC2-8500 memory (the one that my computer current uses) and PC3-8500?

PC2-8500 is technically the DDR2-1066 DIMM for desktops.
Just make sure you get the 204-pin DDR3-1066 PC3-8500 SO-DIMM. (Some sites have kinda typos PC2/PC3)
You can use modules from two different companies, but get modules with the same frequency. (Intel Flex Memory)
You can check which module you have currently installed with CPU-Z or Everest. Its glitchy, but it should show you the brand/manufacturer. -

Since when does XP recognise all 4 GB of RAM, because a while ago even if you instaled all 4 GB it would use only 3 GB ?

XP-32 cannot address the whole 4GB, where as XP-64 can address upto 128GB. So, 4GB with XP-64 shouldn't be a problem.

I currently have 2 x 2GB RAM in my M570TU based machine from Patriot Memory. Part number is PSD32G10662S. It has a CAS latency of 7. Looking at the Crucial memory they also have a CAS Latency of 7. Does this mean that if I replace my memory with Crucial memory that it will not make any difference?

Crucial and Patriot almost always have identcial products, so mixing brands is completely fine.
Crucial always uses Micron memory chips, and Patriot uses either Micron or Qimonda chips.
