I'm looking to upgrade my laptop RAM from 2x512MB to 2x1GB and I was wondering what the difference was between ECC/Fully Buffered memory and Non ECC/unbuffered memory and if this was really important in a regular laptop use.

Laptops memory does not have ecc abilities. Ecc is error checking memory, which is only used in server/workstation environments. no laptop memory is ECC, it is all non-ECC.
The E1505 I own has 2Gb of Corsair Pc5300 667Mhz memory. Your T2400 has a 667Mhz bus, so you should get Pc5300 which runs at 667 Mhz.

Searching on Kinston's website I found the memory recommended for Inspiron serie laptops.... -
is it possible to put 1x2GB?

I tried putting more than 2Gb in my laptop, and it will only recognize 2Gb, with 4Gb of memory installed.
Just buy 2 x 1Gb memory cards. A single 2Gb card will be read as 1Gb, since each memory port only recognizes 1Gb.
I know, I tried doing that myself, but it only recognizes 2Gb.
