I'm reading that you shouldn't let you SSD fill up like a mechanical hard drive or it will slow down greatly.
So I guess that means I should make a partition on the drive that will just be empty space? If yes, how much of a percentage on the drive should I partition?

No, you want to leave unallocated (unpartitioned) free space, not a partition you leave empty.

You don't create a partition to leave empty; you create a partition to use and the 'unallocated' capacity is used by the drive for OP'ing.
I recommend 30% of the real capacity of the drive left unallocated. Any less and I can see the system slow down as I use it (daily).

A year after I was using ~50% of my Intel 520 Series 250GB SSD's capacity for OP'ing; Anand also started suggesting that 25% should be left unallocated.
