So, I just ordered a laptop that comes with a 256x1 256 GB SSD and I noticed that it costs about $300 more than the 128x2 256 GB SSD. What kind of difference in performance is there?

not sure...i figured it would be 2 seperate drives. Raid maybe?

EDIT: side note with an SSD i would have bought ti after the fact. No clue on what kind of SSD they put in there. With a purchase like that i would buy it seperate and than install it on my own. Also i avoid SSDs because i think they are still not worth it. Atleast not on my budget

if the second, 2 drive option was set up in RAID 0 it would be faster - otherwise you would just be dealing with 2 separate drives and have no performance difference
