I have a LG LW25 notebook - 12.1" LCD The HDD is 60Gb 4200rpm (very slow) Anyone knows if I can replace the DVD drive with a HDD I would like to fit a 100Gb 7200rpm drive and use a usb external DVD

You can put a HDD in a DVD slot.
You need to ensure that all connections match. If your Optical drive uses a PATA interface, also known as IDE, then you need an IDE drive or adapter. If it uses the newer SATA Interface, then you need a SATA HDD or Adapter.
Your laptop will support 2.5" HDD, not 3.5" (Desktop size) or 1.5" (Ultraportable size).
Youll need a housing for the HDD, as the HDD will be of different dimensions to the Optical Drive slot in the notebook case. However, its easier to remove your current HDD from its housing, sell it, and buy a faster and higher capacity HDD. You can have two HDDs in your notebook, but I seriously doubt your notebooks supports SATA Hard Drive Configuration, which you need to run two hard drives at once. So running, two HDDs may not be possible as you need a BIOS upgrade probably.
The easiest and cheapest solution is to sell your existing HDD, buy a new fast, low capacity, cheap HDD slot it in, and buy an external Hard Drive, hook it up via USB of FireWire for more storage of files. -
And also remember that a 160Gb 5400 RPM drive performs only slightly worse than a 100Gb 7200 drive, and you'll get more storage space.

If you take Lil Mayz suggestion and sell your current hard drive, make sure you erase the contents so that whom ever buys it can never retrieve them. A simple reformat often doesn't cut it and the files can be retrieved.

I'd say just replace your current hard drive with a 100GB or 120GB Hitachi 7K - but as others have said, it is possible.
Second Hard drive
