Hi I've never done this before and I was wondering if HDDs are just going to be like plug & play. Basically my Sager broke and I am trying to salvage the stuff on it by taking out the HDD and putting it into my new ASUS so I can then transfer everything to my external. Will there be a problem? Thanks.

If it was the primary and you install as primary yes you could have issues. If it was the secondary and you install as secondary should be no problem.

That won't work, no they are not plug and play. You need to put the HD from your Sager into an external HD enclosure and then transfer the data to either another external or to an area on your new Asus HD.
You can salvage your personal data but programs will have to be reinsalled from their source.
Edit: I am assuming that your new Asus has only a single HD. -
yup my new asus only has one HD...and I originally thought I could just pull it out then put in the one from Sager then it would work lol...i guess not.

Spend $10/$15 on external enclosure and you can do all you want to do.

does the fact that there's already an OS installed on the Sager HD affect anything when i connect it to my new laptop through external enclosure? like how will it display the folders (as an external drive?)
-
No, the data on the HD will display just as it did in your Sager, as a matter of fact you may not be able to tell the difference except the drive letter will be different. The new laptop will not try to boot from the external.
