I've been looking at this dock.

Amazon.com: Plugable UD-3900 USB 3.0 Universal Docking Station with Dual Video Outputs for Windows 8.1, 8, 7, XP (HDMI and DVI/ VGA to 2048x1152, Gigabit Ethernet, Audio, 2 USB 3.0 Ports, 4 USB 2.0 Ports, 4A AC Power Adapter): Computers & Accessories

IT has a HDMI and a DVI out

I want to connect to monitors to a tablet that I want to get
HP News - HP Enhances Mobile Offerings with Business-focused Detachable PC

I had some HDMI cables but no other ones for the monitors. I have some monitors that have HDMI and VGA.

I heard that you can connect to a monitor through USB but it has problems. I also heard that video out depends on how many "pins" or something that cord has.

For the second screen, should I get a USB to HDMI? Should I get DVI to HDMI? Should I get DVI to VGA? Assume that the monitors have hdmi or VGA. DOes it matter? The one that I am most worried about is USB to HDMI because I thought that USB is not a video output thing.

I have that model Pluggable on my desk and I use it just about every day. The Pluggable is USB so... that is what you are getting.

The one big downside (for me) is that you can't game on the screens you are running through the Pluggable. If you aren't doing any heavy 3D stuff the Pluggable works great. The upside for me is I have less cables to plug in and I don't have to change my wired ethernet adapter settings because I am used the Pluggable wired ethernet instead of the one built into the laptop.

Oh, and always pick VGA as your last solution for a video connection.
