So I've update to 2 1GB sticks from 2 512 sticks and I don't know what I should do with these two sticks other than sell them. Are there any other possible uses whatsoever? Their resale value really isn't that high at all.... Anyone using the RAM in another way??

Sodimm ram is made only to fit laptops as far as I know there are no other uses for that type of memory. They are too small to fit into desktop ram slots...
You are better off selling and see whatever you can get for them, after all some money is better than none! -
I hear it cleans nasty burnt-on cookware mess.

SoDIMMs are also found in MacMini desktops, as well as some of the smallest PCs around.

You could try to make use of it in a media-center PC, usually they use mobile chipsets.
Other than that, keep them for posterity or sell for some $$. -

Use them as keyrings? Those old 1MB sticks of ram are great for that (from a 486).

I always hold on to the the old memory. It comes in handy when working on someone else's machine. I have gotten rid of nearly all of my old ram this way.
