As title states I plan to use an Intel 310 SSD, this one specifically:
Newegg.com - Intel 310 Series 40GB mSATA mSATA (mini PCIe form factor) MLC Enterprise Solid State Disk SSDMAEMC040G2C1 - Enterprise SSD
with this mSATA to IDE 44 pin adapter:
IDE 44 Pin to 1.8″ Micro SATA Adapter - Micro SATA Cables
Now, to my knowledge this is a SATA layout mSATA which means it will not work in a PCI-E slot (it is merely PCI-E in form factor) and it DOES NOT have crossed 3.3V or whatever the difference is.
I just want these two to work together, will they?

*I went with this solution for an older laptop which must have an SSD in it, the HDD bay is a 2.5" and 9.5mm high.

What system are you putting in into? If it is older than a few months... then mSATA support will be non-existent and this will not work at all.
I think you're trying to mix n match tech that is separated by too much time and over too many different platforms.

I thought I could just buy a 1.8" mSATA device and attach it to the mSATA -> IDE adapter I listed? At least that was my impressions from the carious threads I read on this forum.

The adapter you list is for a microSATA SSD (1.8"), so it could not work directly. mSATA is a smaller form factor the microSATA.
The direct fit solution would require you purchase a 1.8" SATA SSD instead of the Intel 310 mSATA SSD. See http://forum.notebookreview.com/sol...sata-1-8-sata-ssds-available.html#post6978065 for some options.
Saying that, the price of native PATA SSDs is a lot lower than it used to be. So you could get a ZIF SSD from http://forum.notebookreview.com/sol...-1-8-zif-pata-ssds-available.html#post6861746 + US$1-shipped ZIF-to-2.5" adapter or a native 2.5" PATA SSD:

Just to be 100% clear, if I purchase a 1.8" SATA SSD (Say Intel 320 or C300 as you posted), the adapter I posted will work directly with it?
It seems like a funny distinction to make to me. mSATA vs micro SATA. -
