    What SSD would this laptop take?

    Any SSD (7mm or 9.5mm thickness) would do. As you have mounting cages for the drives, the SSD should sit snug in the chassis as it is a straight swap. Recommend a Samsung Pro/Evo. You should be good with anything you choose. Please go through the user feedback and reviews for more information on the SSD of your choice.

    Also, given the way the caddy is made, if it's a 7 mm drive, you won't need a spacer which is great given that not all drives come with one.

    You assume correctly 2x2.5" SATA SSDs

    But the SATA connectors are SATA 2 speeds 3GB/s not SATA 3 6GB/s.

    Which will make things a tad less snappy than sata 6 Gbps, but it will still destroy any HDD, so go for it.
