Definitely go for the HD20500 (aka 7K500), that drive shows phenomenal performance, both in random/access times.

Will I notice performance difference compared to the one I have right now?

    I am using: HITACHI Travelstar 7K200 HTS722016K9SA00 (0A50939) 160GB 7200 RPM 16MB Cache 2.5" SATA 1.5Gb/s Notebook Hard Drive -Bare Drive

Also, the T61 is capped at 1.5GB/s.. Will I still notice any differences?

I recommend the Hitachi 7k500. Even if your capped at 1.5Gb/sec, it is still a very quiet, powerful, quick, and energy efficient hdd. I can't even hear it clicking in my laptop =D
