I was looking at the gateway p-7811, which has the new PM45 chipset, whereas the sager np5796 has the PM45 chipset + ICH9-M. I saw something about it being the SATA controller, in which case I assume that the 7811 has ICH9-M as well? Does it do anything else besides this?

ICH means Integrated Controller Hub. I guess the 9 is the 9th generation and the M is for mobile. It's a standard part of the PM45 chipset. without spending time reading the datasheet, I would expect it to handle a lot of the I/O in addition to the SATA.
