I want the fastest drive with a capacity between 250 to 500 GB but the SATA 2 interface is going to be a limiting factor.

SATA 3 is backwards compatible with SATA 2 so the interface speed won't stop it working. You will have a maximum data transfer rate of around 250MB/s instead of 500MB/s. However, this headline speed only becomes significant if reading / writing large blocks of data. Much of the SSD benefit comes from near-zero access times and all the SSDs are similar in this respect.
I would just look for the best price available from the main brands (eg Crucial, Samsung, Sandisk).
