I was wondering if i bought the new Macbook Pro notebook, would i be able to upgrade the GPU.

No you won't.
Even if you could, it would probably burn up within hours. -

. I'm not sure about the new unibodies but the old ones were soldered onto the Logic Board. Just, no, most notebooks cannot change GPUs.

No for the GPU, but if you model notebook came out customizable = built according to individual specification and other motherboards of your model had a better GPU, you might be able to buy those motherboards with a better GPU. It won't be cheap and depends on how much you're willing to spend, although you could sell your original motherboard reducing the layout for this swap it still will run into $300+!
If you want this, google your model laptop and if you find the same model with a better GPU that is to your taste, contact Apple to see if you could get your hands on one.

The Macbook Pro motherboard is a very intricate and compact board, with all the components soldered using bg-PGA(Ballgrid-Pin Grid Array) format of the CPU and GPU eliminating any socket formats. This allows for a slimmer more compact case design ie;unibody for the notebook.
Will I be able to upgrade the Macbook Pro's GPU?
