I've got a built in 320gb drive on my tx2500z that's coming, would like a 2.5 in 500gb drive. Would it run any hotter? Why doesn't hp offer this?

A 2.5" 500gb hard drive won't run any hotter than a 320gb but IIRC the current 2.5 500gb drives are 12.5mm in height, not 9.5mm meaning they won't fit in some laptops

the samsung 500gb harddrive is a standard 9.5mm thick, so it will fit into a standard laptop. The power usage may be slightly higher on this drive since it uses three platters rather than the conventional two platters like the 320gb drive uses. The attachment of the third disc will cause more centripetal acceleration inside the drive and thus more current is needed to keep the disks rotating at their proper speed.
The amount of power usage isnt much, but I dont know of the top of my head.
Tomshardware has some charts on laptop harddrive power usage in the charts section, which I recommend you to look at.

Actually the increase in power consumption and possibly heat comes from the movement of the additional read/write heads on the extra platter in the drive. Also, until actual thermal measurements are in its tough to speculate on the variances in temps between the 500gb 5400 drives and the 320gb 7200 ones. But considering the current generation of drives all use PMR recording, read/write and seek efficiencies, latencies and power consumption are relative to platter size and quantity.

The Samsung 500GB gets hotter than other drives and uses more power. It's acces times a very slow.

The Hitachi 500GB does better with heat and power but measures 12,5mm and has slower transfer rates.

At this point in time you're better off with a 320GB drive either 5400rpm or 7200rpm. The Western Digital Scorpio 5400rpm and Seagate 7200.3 seem like the best choices at the moment.

The Hitachi 7K200 200GB is also a very good buy at $99. It's fast and power efficient.

Seagate is also coming out with a 500GB 7200RPM drive that measures a height of 9.5mm by Q4 2008. How quickly storage grows.
