I have a 1920x1200 and 1920x1080 setup between a laptop and a monitor for more productivity. If i disable one of the monitors during gameplay will it increase fps?

No, at least not by an appreciable amount.

I have the same set up myself. If you are gaming, it's equivalent to running a game in windowed mode. Aero does take up alittle bit of resources. I just run it on my larger 1080p screen, no point running another screen whilst gaming, if you select whatever item on the "desktop" screen, you game will automatically minimise anyway.
