Hi,
Say I know the chipset (ATA-100) and size (2.5 inches) of my current laptop hard drive. As long as I purchase a replacement hard drive that meets those criteria, what else could possibly go wrong, or would I be set?
(for what it is worth, I'd be upgrading my dell latitude x300)

All notebook drives are compatible with each other. as long as your bios supports large drives (above 8GB, I think), and your current drive is of the newer generation (newer, as in have been around for almost 4 years) with 9mm hieght (not 12.5mm).
Very few notebooks use the smaller 1.8" drives. (you see that only in very thin and light laptops).
I have no idea about the specs of your dell to assure you that what is available on the market will work for you.

Does the Dell 700m use a 2.5" drive?
Is there any reason why I wouldn't be able to upgrade it to a 5400 rpm 120 GB drive, once I find one (or when they become more common)? -
Yes, the 700m uses a 2.5" hard drive. Only very small ultraportables use 1.8 hard drive as qwester said like the IBM x40, Dell x1 or the sony T series.
I was robbed by a sweet little old lady on a motorized cart and I didn't even see it coming.
