I am thinking of downloading either itunes or rhapsody on my laptop, but I am wondering can I install it on the SSD and put the files on my HD? If so what files do I put on the HD?

Install normally (I'm assuming that your SSD is the O/S / boot drive...).
Make a 'music' folder on your HDD and point iTunes to it.
Now, simply move/copy all your music files to this new folder.
Make sure you explicitly tell iTunes where to put 'new' music too when you rip/import them (point iTunes to the HDD 'music' folder you created).
