I have a 6831fx and I would like to see if I could upgrade the chipset to montevina like the one found in the 7811fx. Would that mean I would need to switch out the entire motherboard? is that even possible? if yes then the problem is finding that part for a good price.

If it uses the same chassis you could maybe switch out the motherboard, but it's very unlikely and a largely inelegant solution.

You could upgrade chipsets back in the old Tandy age, when the chipset had like 20 solder contacts, but in todays age, their is no way you can do that.
Chipsets usually have hundreds if not thousands of metal contact pins with the motherboard, where only a laser guided robot can have the precision to solder on correctly.
