I want whatever laptop I buy to be able to run two independent monitors.
I will close the laptop and slide it under my desk, it will power one 20" 1600x1200 screen, and (hopefully) one 22" 1680x1650 screen.
What options are available to me? I have heard that notebooks with two outputs (such as the Asus G1Sn) can still only output to one screen.
How can I run two screens off a notebook? (do I have to buy one of those $120 usb to dvi converters?)

You need one of these.

can that run two screens at different resolutions?

Most likely, no.

I started a thread in the Asus section about this, seems like no one can give a straight answer. REalisitcally though, if the laptop has 2 outputs, vga and dvi, or hdmi and vga, you "Should" be able to run 2 external monitors providing you disabled the notebooks internal screen.

I have a matrox dual head 2 go, and you will have to run the screens at the same resolution. It basically allows you to span 2 screens with the device. For example, you cannot run one screen at 640 x 480 and the other at 1024 x 768.
