I'm about to order the 8 cell extended battery for a NC 8430 but wondering how does this work with with the regular 8 cell battery I already have.

Can I have both batteries installed at the same time? Will my AC plug charge both batteries?
Is there a setting to switch from one battery to another?

Is the extended battery a primary one or a modular one?

If it is modular, then you will install it in the media bay. This means removing your current optical drive. Then you can have the primary battery running and have the modular one to add extra hours.

If the battery you are buying is NOT modular, or you know that your bay is FIXED, then you cannot run both batteries at once. You will have to use them one at a time, going into sleep or hibernate for the few seconds it takes to swap out the batteries.

This looks like a primary battery to me, so you will not be able to use both batteries. You'll need to hibernate the computer to switch batteries.

You will only be able to use 1 at a time.
