I'm going to purchase an HP ZD8000 and was wondering if I'd be able to upgrade the X600 graphics card it comes with in the future with perhaps an X800 or something.

The answer is inevitably no, since laptops are generally no designed to be upgradable, most graphics cards are either soldered on to the motherboard or they are custom built to fit only that chassis/MB combination. So unless HP releases a specific upgrade for the ZD8000, the GPU will not be upgradable.
