How can I check how much the battery has been charged when the AC adapter is connected? I'm on XP dv2500t.

Also can it display hours/minutes instead of percentage?

Just hover your pointer over the battery icon in the system tray. You can also download various battery meter gadgets for the sidebar.

Unfortunately, with HP, in order to see hours:minutes you have to use a program such as rmclock.

The battery icon seems to disappear in the system tray if I have the AC Adapter connected.

NHC( notebook hardware control) will also show the battery charge(under the battery tab) or you can make it display a battery icon on the taskbar that will show the battery charge.

Also i believe you can make the battery icon to always show by going to the Start Menu and Taskbar properties-then go the the notification section and look in the customize section.
