I plan on purchasing the hp 8510p within a week, but I was wondering if I order from the US (where I am currently located) if HP could change the keyboard language to an European language? I mean like moving from an English keyboard letter layout to Danish. This would be really convenient if they could. :)

I'd call them, though I don't think they will let you do that. Who knows, could happen.
