The Hitachi 7k100 and Seagate 7200.1 are the two 7200RPM drives at the moment. The Hitachi is faster, the Seagate runs cooler and quieter. The Hitachi is a little less expensive and more battle tested as they have been around a lot longer than the Seagates. Check out ZipZoomFly for some good prices.
