Do the HP laptops not have latches anymore? Every picture I see I can't see them. How do they stay closed?

Most laptops nowaways don't have a latch any more. Some use magnets, while simpler ones use spring mechanisms that snap the lid shut once you move it close to the palmrest.
-
The hinges on the newer HP notebooks are much more firmer, so the latch is obsolete.
-
They do it to look "cleaner" maybe with no big button switch in the front. Plus, its much more functional, becase you can just lift it. No pushing, squeezing, or sliding.
Usually the 17" notebooks do though, i guess because hinges and magnets cant hold up a 17" lie they can a 15". -
the new dv7's dont have latches anymore.

Yeah, most of the time strong spring-mechanisms in the hinge latch the laptop so that it won't open easily.
