Does readyboost also help with apps running faster themselves or just boost start up? It would be nice to know if I stuck a 2gig USB flash drive in my system that it would help with everything not just boot up

ReadyBoost acts as a supercache repository, so the computer has a bit more memory to access programs, etc. It probably is only useful when starting a program (at least most of them, except games?). Try out your 2GB stick and see if your "feel" an improvement.

It does help with overall performance.
It's not going to be as fast as extra would be, but it does help improve system performance a nice amount.
Or at least that's what I've experienced when using it. -
I just found a couple readyboost benchmarks. Enjoy!
