Thinking about going to 3 GB on my DV5T, do we lose dual channel capability? Thus more capacity and less performance in single channel?

If your motherboard has so-called "flex memory" implemented (if I recall, most new motherboards do), you should get dual channel performance out of the first 2GB of RAM, and single channel performance out of the last 1GB. Basically, the first 1GB in the 2GB stick of RAM will be matched to the 1GB in the 1GB stick of RAM, permitting dual channel operation for those 2GB's of RAM, and the last 1GB in the 2GB stick of RAM will be operated in single channel mode because there is nothing to pair it up with. There's some more discussion, and references to relevant white papers, in this Tomshardware.com thread.
