If I upgrade my HD on a ZT3000 w/ a 7200 rpm HD will that void the HP warranty?

No it will not void the warranty. The HDD is a User Replaceable part, meaning that HP will send out the HDD (if replacement needed) and have you replace it yourself, same goes for the battery. The only this with changing the HDD is that they will not give you support for the drive if anything happens. If you need to send it in for repair, just pop the old drive back in before sending it to them. Therefore no problems.
