The option for 2x160gb ssd's in the Envy 15 doesn't sound bad. Does anyone know the stock drive brand they use? If I were planning on upgrading later, could I save some $ if I do it myself? Thanks!

I believe they're intel, and I usual recommend to buy the lowest hdd and upgrade yourself, especially if you're at all considered with the read/write speeds of the ssd

For the dv8t 256gb SSD drive, it is a Samsung MMDOE56G5MXP-0VB.

intel gen 2 and no, don't upgrade later, it's easier and cheaper to buy from them

+1 to above post. Also, the 2x160 with the Envy come in RAID 0. You can take them out of RAID in order to get TRIM support or you can leave them that way.
If you buy a new Envy 15 from HP Direct, its going to be a gen2 drive. Some of the earlier Envy 15s shipped with gen1s though...
The only practical scenario for not buying SSDs from HP is if you have enough money to buy a 256gb C300 from Crucial (~$700). Otherwise, buy these Intels from HP. -
One intel 160 gb SSD costs about $330 in retail -

The one other question I had, if I got these 2 ssd's, and I didn't feel like they were doing me any better (I am not a "power" user), could I swap them out (and sell em) for a standard HDD, or would I need a different caddy in order to do so? Thanks for all your help so far everyone!

Karamazovmm Overthinking? Always!
for the dual 160gb you'll have to buy another caddy, and the caddy comes with the sata cables already. Consequently the dual 160gb uses a different cable, a micro sata cable,
What SSD does HP use in the stock Envy 15
