I have the option of upgrading to the Infinity display for $25 more. What is it and what are the pros and cons? Thanks.

i belive that the difference is only that they put a piece of glass over your screen... so stock its matte finish= no reflection but less vibrant colors or glass aka infinity with mad reflection and more vibrant colors.

The Infinity Display is basically a Edge to Edge display, you have a Glass/Plastic layer over the LCD and display bezel for a clean look, sort of like most phones use.
The normal one doesn't have a layer over the LCD, you get just the LCD screen with nothing protecting it. The Edge to Edge screens are usually easier to clean and there's a bit lower risk that presses on the screen will break it since there's something over it, but its low; and there's also the possibility of something getting stuck between the lcd and the top layer.
All of the Infinity displays are glossy screens, but a lot of the normal screens now are glossy, too. -

Infinity displays are really, REALLY glossy. I had to buy an antiglare film from photodon.com to deal with it, highly recommended BTW. The regular screens are glossy too but less bad. I'd stick with the regular screens.

I generally prefer the Infinity for the protection and the ease to clean, particularly when someone just has to touch the screen when pointing at something and leaves their gift of finger grease behind. Dust becomes a non-issue also since it's really easy to just wipe it off without worrying about applied pressure. Unless you keep a thin cloth between your keyboard and the screen when closed, you won't have to worry about the imprint that the keyboard will leave on your screen over time. Someone tipped me about that when I first got my dv2000 without an Infinity display but didn't bother about it, and sure enough, even though both the screen and the keyboard were slightly recessed to prevent it, there was an imprint of the keyboard on my screen that developed over time.
On lower brightness levels, I noticed that reflections on the Inifinity are more mirror-like in more well lit areas. It didn't make a difference to me, seeing as reflections were very noticeable on both screens, but it's definitely something you'd have to judge for yourself in person. I did find that it made it easy to keep tabs on what was happening and who was looking from behind.
So, I personally think the benefits of an Infinity display far outweigh the slight increase in reflectivity, but again, might wanna check it out for yourself. Oh, I forgot to mention that it looks really slick too.
As for a matte display, unless you're getting a notebook from HP's business line on notebooks, it won't even be an available option. But generally, the glossy layer brings out the color vibrancy more so colors look richer and more saturated compared to a matte display by directing the light emitted from the screen straight towards the front whereas a the light coming from a matte screen goes more in all directions. The disadvantage is the reflective quality that comes with it.
Here's a side by side comparison someone did a while back of the normal glossy screen and the Infinity screen.
