If I read correct of the T61 review, the screen cover is no longer metal alloy but plastic.

How will this affect the feel of touch and the sturdiness of the laptop?

I haven't actually seen one yet, but my feel is that the plastic cover feels cheap. Is it the case?

You should read Andrew's T61 review. He says the cover of the T61 is a plastic composite material, yet the finish actually feels like metal. You also shouldn't be concerned about the cover being cheap as the metal cover was replaced by a strong metal roll cage underneath the cover.

but you should be concerned about it being heavier and thicker

Some long-time thinkpad affecionados are boycotting the T61

There IS a necessity for this, however. A metal cover would clearly interfere with wireless transmissions. To spin it as if it was a cost cutting measure alone is nearsighted.
