When I made my recovery discs for my T61p I used 2 DVDs and 1 CD. I think if you use all Cds it comes out to be like 9 to 15 discs.
I don't think it matters what kind of DVD media you use. I used a DVD-R disc. I just don't like using a RW disc for info that is permanent; thats just me. Plus with a RW disc it will take longer to make since they spin slower than +R or -R discs. -
What is the difference between + and - discs?

It doesn't matter for your uses. Just get DVD-R or DVD+R. Also you might as well buy more than 5 because price per unit is extremely expensive in such low quantities. DVDs are cheap and useful in case you need them around every once in a while.

Basically, DVD-R (initially championed by, I believe, Pioneer) was used more frequently in the past, but DVD+R (Sony's child, I believe) is a marginally better standard in terms of data volatility that some older devices may not support.
If you know you won't be using DVDs, you could just "borrow" two from a friend. The cost of DVDs is in the cents, so I doubt they would mind. -
I just went out to Fry's today and bought a pack of 10 Memorex DVD+R's for around five bucks.
