Can I grab the product key from my current install of windows on my thinkpad t500, then use a clean install of the same version of windows using that key on a different hard drive? Or will activation cry about that

I don't think you will have any problems. I swapped out my harddrive for an aftermarket one with no problems, but I used an OEM preactivated key that already comes with the machine instead of the Key they put on the bottom. If you haven't heard of the preactivated OEM key before check out Orev's Thread.
