I know that many notebook makers (Lenovo, Dell, Sony, Toshiba, etc) utilize the TrackPoint that IBM produced in their notebook keyboards, but does anyone make a portable external one (wired or wireless)? Would be nice to have that option for notebooks that don't already utilize it.

No, I was hoping to see something that I could lay on the palm rest. Doubt it exists, but it would be nice to see a small square with the TrackPoint and three buttons that connects via bluetooth.

How would you keep it stable...? Double sided tape? And other OEMs do not have comparable "trackpoints" in my opinion.

No, it wouldn't be a cube, just square at its base. I imagine it could be somewhat of a flattened pyramid, or some shape that would slope downward to a base roughly 3" x 3". It could have light rubber pegs beneath it for traction, and the downward pressure put on it during use would otherwise keep it stable.

Can't say I have much experience with trackpoints outside of IBM/Lenovo, but I'm sure it could be done right.

This does exist-- just a bit difficult to find. Interlink Electronics / SMK-Link makes (or made?) several models.

This thread discusses hacking one (an Interlink Versapoint) into an EeePC (the purchase link is broken, but you can see photos):

Here's an industrial-strength (rugged) model (with an industrial price tag :D) :

They also make a whole line of wireless presentation remotes with built-in pointing sticks:
