I know that multi-touch is simply multiple finger-gestures, but can standard touch screens also accept finger input, or just from the pen (albeit just one finger though)?
    :)

Depends on the screen. Some support only the pen and some support both pen and finger input but not at the same time.

I think I'm misunderstanding this though..

The standard ones do not have single finger touch. It's either both multitouch capacitive and active digitizer or active digitizer only.

I think I understand, but I just want to make sure I have this right. So, the x200/201, with standard (non multi-touch screen) can only accept input from a pen, and not a single finger? Only the multitouch can accept both forms of input (and in this case, multi-touch)?

Yep, you're correct. The standard non-multitouch only has a pen digitizer. The multitouch version has both touch-layers and a pen digitizer.
