I'm trying to slim down the software on my T61p and I wanted to know, would removing ThinkVantage Access Connections limit my ability to use Fn+F5 to control the power to my Wifi and Bluetooth antennas?

No, I think these are separate entities. You can remove AC. Be sure to have Power Manager installed though.
