    Is it possible to capture video using the z60m's s-video port?

    To the best of my knowledge, the S-Video port is an OUTPUT ONLY port.

    You would need a capture device (most likely a USB or PCMCIA tuner) with an S-Video or similar input. Something like the Hauppage WinTV-HVR-1950 should do the job nicely, but you will need to spend money on it.
