I just reinstalled Windows 7 on my Thinkpad T500 2055-3AG after a HDD failure. I've installed all the display drivers from what I can see - both graphics cards show up in Device Manager.

However, while I appear to be running the 1680x1050 resolution, I don't seem to have a lot of actual space which the higher resolution would afford me. It looks like I'm running 800x600, which doesn't seem to make any sense to me.

Does anyone remember having similar problem and how they fixed them? It's obviously a PITA. :)

I think that's because Windows 7 uses a higher DPI setting by default when it detects screens of a certain resolution and size. Check this by opening Control Panel, searching for "DPI," then clicking on "Make Text and Other Items Larger or Smaller." If it's set at Medium (125%), change it to Smaller (100%) and Apply. That should fix your problem.
