I believe some X61's also have this problem as well - it seems whenever I'm running an intensive program, my T61 automatically defaults to sleep mode. If it's lag or freeze I wouldn't mind, but after sleep mode I can't even recover anything.

Is there any way to prevent my T61 from going to sleep mode?

According to your description, this does not seem to be sleep mode. It is possible that the CPU shuts itself down after hitting a high temperature which is defined as hazardous. Can you hear the fan turning on? Perhaps the fan does not work.
