From the information Ive gathered so far, some people have suggested that to use the new Nvidia workstation graphics card for gaming, a Nvidia 8000 series driver could be used in the place of the workstation driver, esentially turning the card into possibly a 8600 series level gaming card.

    How plausible is this?
Will there be any conflicts with the card and the driver?
Any and other all info on this subject would be appreciated.

It might be possible. It's been done with the v5200 on the T60p to make it a x1600. But whether or not it can be done with a T61p is unknown, mostly since they aren't out yet.
