Any particular reason that T and X models are commanding what appears to be a $2-300 premium over their competition? (Dell Latitude and HP Pro/Elitebook) Or am I simply mistaken/looking in the wrong places?

Nothing more than history.
ThinkPads used to be superior to HPs and Dells many moons ago, but it's simply not the case anymore, and this comes from someone who has seen more ThinkPads than most people... -
If you're talking about ones with the 1080p upgrades, it's because the Thinkpad's 1080p display on the T5x0/W5x0 is 95% NTSC color gamut as opposed to Dell's/HP's ~60% NTSC color gamut.
But otherwise, it's just because Lenovo wants to charge more. -

I will say this; however, HP and to a lesser extent Dell, have comparably terrible websites for shopping. Dell is passable, but HP's business website is highly restrictive and difficult to navigate. Lenovo's isn't particularly amazing, but at least the menu is strait-forward.
Anyway, I might be a little unfair with the comparison. HP seems to be much cheaper on third party websites and with certain models. Otherwise they're the most expensive direct. Then Dell has good deals, but the base price for some models is ludicrous (1k for a latitude with 2gigs of ram and a 32bit OS, do people actually buy those?). Lenovo appears to tread somewhere between the two. -
I don't see the T or X series commanding a $200-300 premium. If you know how to play the coupon and outlet games you can often get a T or X series very inexpensively, though some patience may be required to get those prices. Compared to the Dell and HPs I've seen, I'd say they're a set up quality wise for the most part.
