1: In CPU-Z, my T61p reads as having a GM965, while since it has the Quadro FX570m, it must be a PM965...Is this normal?
2: Also in CPU-Z, the RAM frequency for each DIMM reads at 333 mhz, though it is DDR2-667...Is this normal as well (does it underclock when not doing intense applications), or should I worry..
3: Could I call Lenovo and order a Thinkpad T61p 6459-CTO Vista Business 64 or Ultimate 64 recovery disk, and if so, how much would it cost?

1: Have you tried Intel's chipset identifying utility?
2: DDR is double data rate. So DDR-667 runs at 333MHz.
3: why don't you just burn the backup dvd yourself? it's bound to be cheaper. -
It is PM965. CPU-Z isn't always right. Everest and intel chipset util gave me PM965 but CPU-Z says its GM965.

1) and 2) seem to be answered, so I'll address 3:
Looks like you ordered your T61p with Business 32-bit, so I don't think Lenovo will supply you with a 64-bit upgrade CD (you might be able to purchase a copy from them, but I doubt it will be cost-effective).
Following Stallen's clean install guide, and with an Anytime Upgrade disc or a friend's retail/OEM x64 Vista disc, you can switch to 64-bit. However, you can't upgrade for free to Ultimate... if you want to switch to x64, you can just install x64 Business. -

Backing up yourself using the Rescue and Recovery software includes all the drivers (already installed) and software (you can choose for most of them).
I've read in this forum that someone asked Lenovo for a different Recovery DVD but didn't get it...
edit: Adinu in this thread said it would cost 45$. -
