I have noticed that the UltraNav driver has never installed correctly on my installation of Windows 7 64-bit. I have installed it multiple times and each time when I attempt to access the mouse settings in the Control Panel it tells me that the Synaptics UltraNav driver could not be found and that I should uninstall it and reinstall it. This is accompanied with my settings (trackpad off) of being defaulted back to everything on once I wake my computer up.
I also have noticed that the On Screen Display driver that I used both in Vista 64 bit and 7 64 bit simply stop working after a while.
Does anyone have a resolution for these issues?

Since you have been using 64 bit for a time now, I will assume you have installed the correct (64bit) UltraNav driver? Did you get the latest, released UltraNav driver for Windows 7 from Lenovo? Also, install the UltraNav utility as well, you will need both to properly utilize your touchpad/touchpoint.
What do you mean that the OSD stops working? Does it mean that when you change brightness, you do not see the bars or that the brightness does not change at all?
I have been running Windows 7 on my T500 trouble free since it hit RTM. The best advice I can give is check that you have the latest drivers installed, as some have been released only recently. Or just use System Update to get your system up to date with the drivers. Remember to get version 4.0, which works with W7. -
I have installed the latest Windows 7 driver for both. And the bars just stop showing up, the function works fine, it just isn't being measured on the screen.

As for the OSD issue, do you have the latest graphics driver installed from Lenovo? Somewhere else on the forums people had trouble with the OSD when they did not have the latest graphics drivers installed.

Manually install the correct system interface driver and let System Update do the rest for you.
That fixed the problem for me. -
There is a certain order to install them, which is laid out in the mini-guide in another thread. Also, the latest video drivers help.
Best move is to uninstall all Ultranav and onscreen stuff, reboot, install newest video driver, then follow the steps from the mini-guide.
Lenovo makes this REALLY too complicated to get it working right.
The suggestion to let Lenovo's System Update to do it is good; previous versions were kinda janky, but I used in with Windows 7 64-bit and it got all the drivers correct. -
The On Screen Display issue was fixed by installing the System Interface driver, which I somehow failed to install on this install. However, after uninstalling and reinstalling the UltraNav Driver and Utility again the problem of not holding my settings continues.
